Air fried enchiladas

These air fried Enchiladas are so quick and easy to make and are packed full of Mexican flavour!

SERVES 2

Essential kit
You will need an air fryer, mixing bowl and oven-proof dish.

Ingredients
1 carrot, grated
1 small onion, diced
3 cloves of garlic
500g beef mince
2 cloves of garlic, grated
1 teaspoon of ground coriander
1 tablespoon of ground cumin
1 teaspoon of paprika
1 teaspoon of ground turmeric
1 teaspoon of chilli flakes
1 tablespoon tomato puree
1 tablespoon of Worcestershire sauce

To Serve
X6 Medium size tortilla wraps
1 tablespoon frozen chopped coriander
Chopped Jalapenos
Grated mozzarella cheese

Method
Start by chopping your onion and grating your carrot and adding to a mixing bowl with a drizzle of olive oil. Add into an oven proof dish and place into your air fryer drawer on 190c for 5 minutes or until they have started to soften. Whilst the onions and carrots are cooking, grate your garlic cloves.
Add the grated garlic to the air fryer, give the ingredients a good stir then cook for a further 3 minutes until all the vegetables are soft and starting to brown.
Whilst the vegetables are continuing to cook, in the mixing bowl add the mince and spices: a teaspoon of ground coriander, a tablespoon of ground cumin, a teaspoon of paprika, a teaspoon of ground turmeric, a teaspoon of chilli flakes. Add more chilli if you like it hot! Add a dash of olive oil to the bowl and mix the mince and spices well, (You could use silicone gloves and mix the mixture by hand). Season with salt and pepper. Add your seasoned mince to the air fryer and mix with the vegetables. Cook on 190c for 8 minutes or until the mince has started to brown. Stir a few times to help break up the mince, you may need to do this a few times.
After 8 minutes, or once the beef has browned, add your beef stock, Worcestershire and sauce then turn the temperature down to 180c and continue to cook for a further 5-8 minutes. Once cooked, remove your dish and start to create your burritos, by adding an equal amount of mixture to each wrap, and rolling them, be generous with the amount! Place them into an oven proof dish that fits into your air fryer. After each wrap has been rolled, and they all fit snugly into your dish, sprinkle over the mozzarella chase and place into the air fryer on 180c for 8/10, or until the cheese has started to brown. Serve with a sprinkle of fresh coriander and spicy jalapeños.
