Air fried cookie bites

The idea of fried cookies might not seem right or appealing but these aren’t just any fried cookies, these are air fried cookie bites which means no vats of oil to be found anywhere and they are bound to be delicious. These air fried cookie bites are great as a small snack and loved by all – including those of us with a sweet tooth, they are just enough to feel indulgent and take away those sweet tooth cravings but not enough that you will feel naughty for eating them.
Super fast and super simple to make cookies this good couldn’t be any easier to achieve! If you fancy you can freeze the uncooked cookie dough in a sealed sandwich bag ready for another day and bake them straight from the freezer –just add an extra 5 minutes to the cooking time. These air fried cookie bites are super speedy to make and it means you’ll have cookies on tap!

Ingredients

150g salted butter, at room temperature
80g light brown muscovado sugar
80g granulated sugar
1 large egg, beaten
225g plain flour
1/2 tsp bicarbonate of soda (baking soda)
200g plain chocolate chips or chunks

Method

In a large mixing bowl, beat together the butter, muscovado sugar, granulated sugar, egg, plain flour and bicarbonate of soda to make a firm dough. Add the chocolate chips or chunks and beat again until well incorporated.

Using your hands, break off golf ball-sized pieces of the dough and roll them into balls. Continue until all the dough is used up. (If you don’t want to cook all the cookies now, transfer a portion to the freezer to cook at a later date.)

You can cook the cookies in a large silicone mould or on a sheet of baking paper. Either way, transfer the cookie balls to the air fryer, spacing them out so that they can spread during cooking and bake for 10–12 minutes at 180°C, until golden but still fairly soft (they will firm up as they cool). Depending on how many cookies you are cooking off and the size of your air fryer, you may need to do this in several batches. Leave to cool slightly, then serve your air fried cookie bites still slightly warm or cooled. Perfect with a cup of tea or a glass of milk and a smile on your face!

Top Tip: If you want to bake larger cookies, just up the cooking time by 5 minutes or so and check the cookies regularly.
